Last week, YouTube acknowledged a widespread issue with low quality video playback on iOS devices, but now says that the problem is fixed.

Over the course of several days, YouTube users on iPhone and iPad were widely reporting issues with video playback on iOS, with full-length videos and Shorts playing at very low quality. The issue was affecting a large number of users, and was acknowledged on Google’s support forums on March 20.
The fix, presumably made on Google’s side rather than with any app updates, should be available to all users at this point. It was hinted that there might be some isolated issues on other platforms as well, which this fix likely also addresses.
